Recipe idea: Vegan roasted vegetable omelettes

To prepare this recipe, start by roasting your favourite vegetables: you can use a mix of peppers, onion, courgette, aubergine and carrot. Cut them into strips or small cubes, mix with a little EVOO, salt and spices to taste, and roast them in the oven until golden and tender.

Meanwhile, prepare the vegan omelette base by mixing whole green pea flour with water and a pinch of salt. The recommended ratio is 1 part flour to 2 parts water, until you get a smooth, slightly thick batter like pancake mix. This mix will act as an egg replacement, giving structure and a soft but firm texture.

Fold in the roasted vegetables and stir well. Heat a non-stick frying pan with a few drops of olive oil, pour in a portion of the mix and cook over medium-low heat for a few minutes on each side, until golden and set. You can make small individual omelettes or one large “frittata” style.

Excellent versatile product

Very good flour, with a mild flavor and fine texture. I really like its high vegetable protein and fiber content, ideal to enrich my healthy recipes. I use it in pancakes, bread, savory doughs and even to thicken soups and creams, and it looks great. In addition, being whole grain, it keeps all the nutrients of the pea and is perfect for those of us who are looking for gluten-free alternatives.
