Good option
I was used to guar gum as a thickener. While it has the same function, xanthan gum has worse solubility in whipped cream cheese. I used to use it to make desserts with fresh cheese, or for sweets, and I don't like the flavor it leaves. However, in savory recipes it is not noticeable at all and it works better than guar gum.
Estaba acostumbrado a la goma guar como espesante. Si bien tiene la misma función, la goma xantana tiene peor solubilidad en el queso fresco batido. Yo lo gastaba para hacer postres con el queso fresco, o para dulces, y el sabor que deja no me acaba de gustar. Sin embargo en recetas de salado no se nota nada y funciona mejor que la goma guar.
