They have surprised me a lot, they are a very versatile and convenient way to add protein to any dish, I use them for example to add protein to a vegetable dish, so I don't have to cook breast and worry about freezing/thawing it. I can't do without powdered egg whites. Although they dissolve regularly, they leave lumps. I use a powerful whisk to make milk foam and it is fine but with foam... I will continue to buy it.
