What is Xanthan Gum?

Xanthan Gum by FoodSeries is a food additive intended for use in foodstuffs, E-415, based on Xanthan powder.

Xanthan gum (also called xanthan gum, xanthan gum or xanthan) is a high molecular weight polysaccharide produced by the fermentation of the bacterium Xanthomonas Campestris in carbohydrates (such as corn). It is mainly used as a food thickener.

This product is suitable for vegans and is 100% GMO-free.

Xanthan Gum Properties

Physically, xanthan gum is in the form of a white/cream-coloured powder.

Nutritionally, it does not provide fat or protein, it is a pure carbohydrate in the form of soluble and indigestible fibre, which absorbs water as it passes through the digestive system.

This is why many people use xanthan gum to increase fibre intake in their diets.

In addition, xanthan gum has multiple uses.

What is Xanthan Gum for?

The main use is to modify the original consistency of a liquid by adding viscosity and density.

It can act as a thickening agent, stabiliser, emulsifier or suspending agent.

Within the food industry it is widely used to give consistency to dairy products, sauces, instant products, desserts, pastries or fruit juices. Xanthan gum has many advantages over other emulsifiers because it does not alter the taste, smell or colour of the food to which it is added.

Many people use xanthan gum to increase their intake of dietary fibre.

It can be used in a multitude of recipes, as it is not affected by cooking or high salt concentrations, it does not affect the pH or temperature of the liquid, and it does not add calories to the recipe.

It also differs from other thickeners in that it can be used cold, i.e. no heat or boiling is needed for it to work.

Xanthan gum is soluble in both hot and cold water, hydrates very quickly once dispersed and facilitates water retention resulting in very viscous solutions at low concentrations. In addition, its solutions have uniform viscosities over temperature ranges from freezing to near boiling point, with incredible thermal stability.

Drinks

Xanthan gum is widely used to add body to fruit and vegetable drinks and juices.

If these drinks have pieces of fruit or pulp in them, the use of xanthan gum helps to keep them in suspension and give them a better appearance.

Xanthan gum is often used in cocktails to increase density and make particles or fruits remain in stable suspension.

Dairy

It is very common for xanthan gum to be mixed with guar gum and to be used as stabilisers for ice creams, sorbets and chocolate milks.

By adding it, the smoothness of the ice cream is significantly improved, avoiding the amount of fat needed to give an equivalent texture and thus making lower calorie low-fat ice creams.

In ice cream, xanthan gum also prevents ice crystals from appearing, making it creamier, and favours the formation of micro-bubbles of air, which gives volume and lightness to the ice cream.

It is used in the production of dairy desserts such as custards, especially in egg substitutes to simulate egg yolk.

Sauces and dressings

Many sauces and dressings incorporate xanthan gum to give emulsions greater stability and a thicker, creamier feel.

Sauces thickened with xanthan can be frozen without any problems as they will not lose their qualities once thawed.

Bread and bakery products

In the baking industry, xanthan gum is a widely used ingredient mainly for its ability to increase water retention during baking and to extend the shelf life of finished bakery products and refrigerated doughs.

In many breads, xanthan gum is used as an egg substitute, in particular it can reduce the egg white content without affecting the appearance and taste of the product.
